Directions
Prepare the Turkey:
- Rinse the wild turkey breast cubes under cold water and pat them dry with paper towels.
- Cut the turkey into 1-inch cubes, ensuring uniform sizes for even cooking.
Marinate the Turkey:
- In a bowl, whisk together olive oil, honey, lemon pepper seasoning, black pepper, salt, garlic powder, onion powder, thyme, and oregano to create the marinade.
- Place the turkey cubes in a large resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
Prepare the Grill or Oven:
- Preheat your grill to medium-high heat or preheat your oven broiler.
- If using a grill, make sure to oil the grates to prevent sticking.
Cut/ Slice the lemon and vegetables:
- Make sure to cut everything close to the same size
Assemble the Kabobs:
- Thread the marinated turkey cubes and vegetables onto the skewers, I make sure to put the lemon slice next to the turkey to keep it tender and moist and that each kabob and an even array or vegetables and turkey.
Grill or Broil the Kabobs:
- Place the kabobs on the preheated grill or under the broiler.
- Grill or broil for 8-10 minutes, turning occasionally, until the turkey is cooked through and has a nice char on the edges.
Serve:
- Remove the kabobs from the heat and let them rest for a few minutes.
- Serve the lemon pepper wild turkey kabobs on a platter, garnished with lemon wedges.
Optional:
- Drizzle additional fresh lemon juice over the kabobs before serving for an extra burst of citrus flavor.
- Serve with a side of rice, quinoa, or a refreshing salad for a complete meal.
